Laker's Tortilla Soup

This was so good. Really yummy and filling. And a broth based soup that V likes - hurrah! Also, the veggies can easily be chopped ahead of time and frozen for a do ahead meal.

Food process with the slicer:
2 onions
1 bunch celery
2 big handfuls of baby carrots
1 poblano pepper
2 garlic cloves

Saute for 5 minutes with:
2 TB butter
1.5 tsp salt
1.5 tsp cumin
4 sprigs thyme

Add:
6 cups chicken stock
1/2 tsp chipotle chili powder (or more to taste)
2 TB tomato paste (or more to taste)
1 lb raw boneless chicken cut in 1/2 inch cubes (or leftover cooked chicken)

Bring to a boil and then reduce to simmer for 30 minutes. Remove from heat and add:
1/4 cup chopped cilantro
1 TB lime juice (or more to taste)

Serve with grated cheese, sour cream, guacamole, and tortilla chips if desired. For our family, this was 2.5 meals. So, so good.
