These were something I came up with the other day and I keep making more! Just slice a cucumber, make the feta schmear and top with half a grape tomato. I also liked it with a slice of green onion on top. Yum!
To make the schmear, start with a glob of labneh. Add as much feta as the labneh will take without getting totally dry. Squeeze lime juice into it until it's the consistency you want. Add sea salt to taste. Assemble and top with freshly ground pepper.
