Pecan Fried Rice



1 ½ TB olive oil
4 cups cooked brown/white/wild rice
½ cup green peas
¾ cup green onions, chopped
½ cups toasted pecans
2 TB soy sauce
1 tsp sesame oil (opt)

Heat olive oil, add cooked rice, season with pepper. Sauté 3 minutes. Add peas, green onions, pecans, soy sauce and sesame oil. Stir until peas are heated thru 3-4 minutes. Note: toast pecans by putting them on a baking sheet under the broiler. Watch them closely cause they don't take long to burn. We like adding pineapple and shrimp and I tend to double the peas and soy sauce just for good measure.
