Hummus

2 cups cooked garbanzo beans (chickpeas)
1 tsp salt
2 garlic cloves, peeled 
2 TB tahini
1/4 cup fresh lemon juice
1/2 cup olive oil


Put all ingredients but olive oil in food processor or blender. Process until smooth. With appliance on, drizzle in olive oil slowly, waiting for it to incorporate fully before adding more. Add additional seasonings to taste (I usually go with more garlic, tahini and salt than listed). Notes: you can sprinkle with paprika or parsley and serve with vegetable sticks, pita bread or crackers.

  1. My recipe uses less olive oil and more tahini paste. I'll try yours soon to compare.
