Applesauce Muffins

1 1/2 cups whole wheat pastry flour
1 cup oat bran
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp allspice
1 egg
1/2 cup brown sugar
1/2 cup chopped dates
1 1/4 cup applesauce
1/4 cup raspberry or any all-fruit jam (optional)

Preheat oven to 350'. Mix dry ingredients in a large bowl (flour thru allspice). Add egg, brown sugar and dates. Stir in applesauce and mix well. Fill 12 muffin cups with batter. If using jam, fill muffins half way, drop 1 tsp jam per muffin on top of the batter, then top with more batter. Bake 25-30 minutes or until starting to brown. Note: whole wheat pastry flour can be found in the bulk section of whole foods or may be ground from soft white wheat. You may also sub the dates for other dried fruit - raisins, apricots, etc. Thanks AW!
